Freshly roasted coffee beans really do taste better. Okay, we might be a little obsessive about the fresh roasted bean thing but it really does matter.
Since most of us are completely unaware that the coffee we are drinking is from a stale bag of coffee. So let me explain.
COFFEE BEANS ARE YEARS IN THE MAKING
A coffee tree grows best in tropical locations. The average Arabica plant is a large bush with dark-green oval leaves. The fruits; or cherries, are rounded and mature in 7 to 9 months; they usually contain two flat seeds, the coffee beans.
These green beans are transported across the world and if kept in a temperature controlled environment they can last for several months. The beans are then roasted, packaged and ready to enjoy.
THE ROASTING PROCESS
Roasting the raw coffee seeds turns them into the decadent brown coffee bean we all see in coffee shops and grocery stores. During this roasting process, hundreds of chemicals and physical reactions are occurring and they create new aromatic compounds. As soon as the beans come out of the roaster the cooling process begins. The gases start to escape from the bean. At this point, the beans need to settle for about 2 days before they are brewed. As the bean degases the flavor continues to evolve.
HOW TO KEEP YOUR COFFEE FRESH
Freshly roasted coffee beans taste better. So the way you are storing your beans is important to ensure optimum flavor.
DEGASSING VALVE
Near the top of your coffee bag you may have noticed it has a small round piece of plastic with a couple of holes. This is the degassing valve. It lets the CO2 gases out while keeping oxygen at bay, keeping your coffee fresher for longer.
STORAGE
Keep your beans in a sealed container or airtight bag. Our bags at Stone City Coffee Roasters comes with a Ziploc to ensure optimum freshness. Ensure the bags are NOT in sunlight. The best spot is in your cupboard.
GRINDING YOUR BEANS
Grind your coffee just before you brew it. If you grind your coffee to far ahead of time you will lose flavor. Grinding accelerates the aging process and you will quickly begin to lose flavor.
